What types of veggie scraps can be used to make good Veggie broth???

What kind of scraps, can you save in the freezer for eventually making a real good Veggie Broth????

From what types of vegetables?

The best time to make good veggie broth is in the fall when the garden is being harvested.  I use all the celery leaves, ugly carrots, onions that won't keep well.  I also drain the water off my tomatoes when I make salsa and cook all my veggies in there.  Now, I normally make a chicken and veggie broth, but that is what I do, and I can enough for the winter.

Bowker Acres.....Fall does sound like a better time, but just wondered about throughout the summer too.

I chop up my onions and freeze them in Large Zip Loc Freezer Bags. Works great.  So easy to grab what I need some.

Fall is a great time as they are so plenty.   I've made it throughout the year as well.  Sometimes the fridge gets to ram packed and things must be dealt with. 

I would say that most vegetables would be good for broth.  Some, like zucchini and peppers,  would boil down to nothing and need to be mashed up a bit.
